Secondly, decide what you want in your tamales. I make chicken and jalapeno cheese.
Chicken tamale filling-
Ingredients:
2 chicken breasts
1 can chicken broth (14.5oz)
1 teaspoon cumin
1 teaspoon California chile
3 cloves garlic
1 can diced tomatoes (14.5oz)
1 can rotel (10oz)
1 can red enchilada sauce (10oz)
Salt and pepper
Jalapeno cheese filling-
1 can sliced jalapenos
Cheese (I used pepperjack)
Directions for chicken filling:
Add to crockpot: chicken broth, diced tomatoes, rotel, and enchilada sauce.
Add chicken, make sure chicken is not completely covered with sauce, you want half way submerged.
Add cumin, chile, garlic cloves, salt, pepper and a couple bay leaves.
Turn on high for about 4 hours ish and chicken will fall apart easily when forked.
Don't forget the masa, you can buy pre-made or a bag a flour. I made my own cuz it's really not that hard.
Masa-
*If you plan to use all the chicken filling recipe above, double the recipe below.
2 cups masa flour
1 can chicken broth (14.5oz)
1 teaspoon baking powder
1/2 teaspoon salt
2/3 cup lard/Manteca
Mix flour, salt, baking powder.
Add broth, so you get a dough, and then slowly mix in lard.
The masa recipe makes about 8 tamales, although on the package it says 16...lies!
Also once you assemble the tamales, steam in large pot for one hour.
